This decadent naked carrot cake is the perfect morning or afternoon snack. Two thick layers of moist carrot cake, filled with crunchy walnuts, and warming spices of cinnamon and nutmeg. It has a lemony buttercream centre, and is topped with walnuts and toasted coconut.
